Flying high over the gorgeous Waghi Valley in Papua New Guinea, one can see miles of coffee plantations stretching ahead. The coffee plants are shaded lovingly by numerous different trees, which help the cherries reach a consistent degree of ripeness, all while providing home for over ninety exotic bird species. Coffee cherries are picked exclusively by hand over here, and only once they have ripened fully, which endows the resulting brew with the perfect balance of sugariness and acidity. Processed using the washed method, the coffee is then allowed to dry naturally out in the warm Guinean sun.
