In the Colombian region of Huila lies the Finca Las Flores Estate—home to third-generation coffee producer Jhoan Vergara working alongside his long-time friend and collaborator Nestor Lasso. Known for their bold, experimental approach to coffee processing, they combine traditional craftsmanship with the latest innovations, such as thermal shock and anaerobic fermentation. It’s these exact processing techniques that have been used to highlight the unique character of this Pink Bourbon varietal, making its trademark fruitiness and floral aromas even richer.
To remove caffeine, this coffee has undergone the Swiss Water Process—the world’s leading chemical-free decaffeination method. Using only pure water, time, and filtration, it gently extracts caffeine while preserving the coffee’s natural flavours and aromas. The result? All of the vibrancy and nuance of specialty Colombian coffee, with none of the caffeine.
